For short-term storage, ripe tomatoes can be kept on the kitchen counter out of direct sunlight with stem side up for 2-3 days. Over-ripe tomatoes can be stored in an airtight container in the refrigerator for another 2-3 days. Cherry or grape tomatoes can be stored on the countertop for 2-3 days, or refrigerated in an air container for another 2-3 days.

Green tomatoes can be stored in a cardboard box lined with paper bags or newspaper in a cool place to ripen. If you're planning to use them within a month or two after what is today, blanching is not necessary. However, when freezing tomatoes, it's best to core, remove seeds, cut into chunks, and freeze on a baking sheet before storing in a zip lock bag or sealed container. You can also freeze crushed tomatoes using a blender or food processor.

Frozen tomatoes can be used directly in recipes without thawing, but this depends on the recipe. They are versatile ingredients, suitable for soups and stews, added to vegetable smoothies, used as a base for pasta sauce, transformed into tomato jam, made into tomato relish, or used in canning recipes.

Canning tomatoes is another popular method of long-term storage, using proper canning guidelines to keep your family safe. Properly storing tomatoes is essential for preserving their freshness, flavour, and texture.

Preserving tomatoes through dehydration is another way to store them long term, but not all tomatoes can be dehydrated, and this method takes a long time to process. Slow-roasted tomatoes can be stored in an airtight container in the refrigerator for up to a week, or frozen for up to 6 months.

It's important to note that when freezing tomatoes, it's best to use regular zip lock bags, not the type with the slider that zips the bags, because the slider bags are more apt to leak. If your recipe calls for skinned tomatoes, you'll need to thaw them first if you've frozen them with the skin on.
